It’s National Homemade Soup Day and while there’s nothing better on a cold February day to open a can of tomato soup and whip up a grilled cheese to go with it, I just love homemade soup!
My wife Karen has perfected a couple of soups. Just last night I picked up some fish bits at the grocery store and she made a wonderful, creamy fish chowder. It was supposed to be a seafood chowder but the extra shellfish that were supposed to go into it accidentally got eaten. That happens a lot.
One of the girls when she’s home from the city always requests homemade corn chowder. She leads a vegetarian lifestyle and our homemade corn chowder is on top of her favourites list.
Another big favourite around here is homemade cream of broccoli soup. So good!
But the ultimate winner is French Onion soup. It takes a lot more time and preparation than the other soups, but it is so worth it. Properly caramelizing the onions takes time and patience. And yes, it has to have a piece of crusty bread covered in finely grated cheese on top.
