Labour Day here at our house was pickling day – we put up six large jars of pickled beets and four of regular pickles.
We didn’t do any of the other favourites like mustard pickles or bread and butter pickles because we still have a few large bottles left over from last year’s crop.
My wife Karen and I love pickled beets. Beets may be the easiest thing to grow in your home garden and no matter the size of the beet, they all make great pickled beets once you slice and dice them.
We love pickled beets so much that we even finely chop them up and throw them in a salad with a vinaigrette dressing. They are so good that way!
