More Pancake Days

I am becoming a believer we need more pancake days. I like pancakes, but there doesn’t seem to be enough reasons to eat them. It’s time consuming to have them for breakfast, unless someone else is making them. And I tend not to think of them for dinner. Except for today.

And there are lots of ways to eat pancakes. I will admit to being a syrup lover. And it must be maple syrup. Not some kind of sugary concoction that is sort of like maple syrup. I want a tree involved.

Some may even have fresh made syrup for their pancakes today. I have heard that the sap has been running in some areas and there were people starting to boil it down already. So there is fresh syrup out there.

I have some good home made syrup set aside, just waiting for today. It may not be fresh out of the tree, but it’s not far from it. And I am looking forward to it. I’m really not sure what I am looking forward to most. The pancakes or the syrup.

But there are those who top their pancakes with other things. And there are a lot of other things that can work with pancakes.

There are various types of fruit. Some can be cooked to make them more syrup like or even jam like. Others are good just as they are. You can use yogurt, whipped cream, cream cheese, honey, marshmallow cream, jams, jellies, nuts, sprinkles, peanut butter, hazelnut spread… the list seems to go on and on. And we’re not even getting to things like eggs and even bacon. Bacon goes with pretty much everything. You can even just use toppings like cinnamon sugar.

Once you start to look into it, the list seems almost endless. There are a lot of things that can go on pancakes. And many things that can go into pancakes.

So I think we need more pancake days. One a year just doesn’t seem to give us enough opportunity to truly experience the world of pancake possibilities.

Or maybe I just need to eat them more often.
