If we’re talking Nova Scotia, I think the Lobster Roll might be the most appropriate. (even though most of us can’t afford one right now)
And let’s not forget Clara Harris’s Hot lobster sandwich.
Other possibilities for the South Shore might be any sandwich that incorporates cucumbers or cabbage since they are a big part of our Lunenburg heritage.
