A Little Comfort

I think the weather is getting to me. As much as don’t like cold weather, I’d rather have something a bit more consistent. This one day warm, the next day cold thing gets to me. You can’t figure out whether to wear shorts or long johns from one day to the next.

So I figure what I really need is maybe some soup. Some nice homemade soup. Something to warm you from the inside.

Not that I haven’t had homemade soup lately. The Christmas turkey eventually made it’s way into the soup pot. In fact, I don’t think it was entirely finished. I think it made it’s way to the freezer. Turkey fatigue had set in.

I started thinking of possible soup I could maybe whip up. I looked at popular soups and came across a recipe for beef pho. Aside from the fact it takes several hours to make the stock and probably a trip to Vietnam for spices and ingredients and sounded like a great idea. Just a bit time consuming.

That’s the problem. Deciding on home made soup after you leave the house for the day probably means it’s not going to happen. It would pretty much have to be in the slow cooker before I walked out the door.

There area couple soups I could whip up on short notice. Something like hamburger soup could work quite well. So there are options.

Or maybe just some comfort food. Like a nice pot of chili.

Home made soup day comes up on February 4, so maybe I should take the time and plan this out. In the meantime, there’s still turkey soup in the freezer. Maybe that’s what I really need.
