After my admission last week that I prefer Stovetop Stuffing for my dressing, Lisa from Shelburne sent in this recipe for Stovetop Stuffing Egg Muffins (sounds more like quiche)
1 pkg. (6 oz.) STOVE TOP Stuffing Mix for Chicken
7 eggs
3 Tbsp. Real Bacon Bits
1/2 cup Shredded Cheddar Cheese
1 Heat oven to 400ºF.
2 Prepare stuffing as directed on package; cool slightly. Spray 12 muffin cups with cooking spray. Press 1/4 cup stuffing onto bottom and up side of each cup, forming 1/4-inch rim around top of each.
3 Beat eggs in measuring cup; pour into stuffing cups. Top with bacon and cheese.
4 Bake 20 min. or until centers are set. Let stand 5 min. before serving.
