Mac And Cheese Mistake

I love K.D. Mac’N’Cheese never gets old for me, but there’s a good reason. I refused to eat the stuff for most of my childhood and youth.

You see, I lived at the outer limits of my school zone, and we had to go home for lunch. It was a half hour walk if you didn’t dawdle, and you got less than 30 minutes to eat your lunch and start back to school.

When I was 8 or 9, my grandmother had come to live with us. She was helping my mom get lunch on the table for my brother and I, and somehow, she didn’t notice the top of the salt shaker come off when she was salting the boiling water for the Kraft Dinner. What ended up on my plate was beyond salty.

When I turned my nose up at the inedible lunch, I got yelled at and told to eat my lunch as we only had ten minutes left before we had to head back to school. Well, after being forced to eat a few more spoonfuls of the stuff I got sick. That’s when Mom decided to try a forkful. I’m sure she felt bad but time was ticking so she threw together some sandwich for me to eat as I walked back to school.

That incident put me off Kraft Dinner until I finished school and moved out on my own. I would buy Catelli dinner which was K.D’s big competitor, and take their elbow noodles and then use the better cheese packets from the K.D. box. It would be another ten years before I could bring myself to eat a Kraft Dinner noodle.

Now I love the stuff! Just don’t make it soupy! I like to cut back on the amount of milk and butter so it’s more thick and sticky.

I’ve never added anything to my Mac N Cheese but I hear there are lots of great cooking hacks out there.
