There seems to be a global shortage of yeast right now, but have no fear – if you are intent on making some fresh loaves of bread all you need is a yeast substitute that makes bubbles to make your loaves lighter and fluffier. And there are lots of choices out there.
Baking Soda plus an acid like lemon juice or buttermilk in equal amounts. Substitute it in the same amounts for the amount of yeast in the recipe.
If you’re not thrilled about adding lemon juice to the loaf replace it with a mix of milk and vinegar added to the baking soda. Again, substitute in the same amounts for yeast in the recipe.
Did you know Baking Powder is just Baking Soda and an acid? Replace the yeast amount with the same amount of baking powder.
And if you are planning ahead, you can make some sourdough starter but it takes at least five days. You’ll need to subsitute a lot more sourdough starter… It’s a cup of starter to two teaspoons of yeast.
Also, try exploring recipes for flatbread and Irish Soda bread which don’t call for yeast. Many of these recipes make a great tasting “loaf”of bread!
