Lunenburg chef of Fleur de Sel fame is going for the gold one last time.
This is Martin Ruiz Salvador’s third trip representing the province.
This time he earned the honour with his Rabbit & Snails dish.
“I kind of did a take on a French dish which is rabbit stuffed with snails with Dijon mustard and mustard sauce. And that was paired with Nova Scotia burgundy style wine,” said Salvador.
He says it’s his last kick at the big prize as he makes room for other Nova Scotia chefs to win their way to the finals.
The Gold Medal Plates charity event has raised 11-million dollars for the Canadian Olympic Foundation and Canadian Olympic athletes.
